Winemaker's Notes:

The Sauvignon Blanc grape traces its origin to western France in the Loire Valley and Bordeaux Regions. Its name is derived from "Sauvage" which means "wild" in French denoting that its origins came from an indigenous grape. It is also interesting to note that sometime in the 18th century Sauvignon Blanc was paired with Cabernet Franc to parent the Cabernet Sauvignon vine in Bordeaux. This grape variety is now planted in many of the world's wine regions, producing a crisp, dry and refreshing white wine.

This Sauvignon Blanc was made from grapes that came from two vineyards on Shenandoah and Steiner Roads. We pressed the whole clusters and fermented the juice to dryness at a very cold temperature of around 55 degrees F that delayed the fermentation to about 30 days. This wine has not undergone malolactic fermentation to preserve the natural crispness. 

This dry Sauvignon Blanc has an inherent sweetness which goes away on the second sip. It is very floral, mainly with citrusy aromas and flavor reminiscent of grapefruit and a substantive mouth-feel that carries all the way to the finish. Unlike other Sauvignon Blancs from this area, it does not have the herbaceous, grassy or vegetal flavors. This wine is very versatile. It is perfect for drinking on the patio on a summer day or to accompany a variety of foods from salads, seafood, cheeses or even smoked meat.
