Poached Pears In Di Arie Rose

4 Bosc Pears peeled, cut in half and cored
1 Bottle of Di Arie Rose
1 Cup Sugar (as preferred)
1/2 Stick Cinnamon crushed
1/2 tsp Rosemary (in springtime replace with shredded fresh Basil)
1/2 tsp. Coriander
Pinch of Black Pepper

Into a pot, pour one bottle of Di Arie Rose. Add sugar, cinnamon, rosemary, coriander and black pepper. Heat liquid and stir ingredients well. Add Pears and bring to a gentle boil. Simmer Pears until they are soft when inserted with a cake tester. 

Remove Pears and slightly reduce liquid and cool to room temperature. Pour reduced cooled liquid over Pears and serve slightly chilled or room temperature. You may prepare dish up to 2 days in advance.
